Pretty Things



Who doesn't love pretty things?


Wouldn't it be great to have a pretty view like this while you work?


Or to enjoy a pretty cool swing as if you were still a little kid again?


Or what about slipping into something very pretty to wear...


And picking out the prettiest accessories to wear with it...


Then going out to a party...


And showing off your pretty cool dance moves... LoL.


I realize that there are many day to day things...


That tend to be pretty, especially when they are arranged just so...

Salmon cakes



Okay I know, it's been a little while since I've even looked at this blog. Most of my spare time has been devoted to the book that I've been working on. I've actually been trying to write every single day and it's paying off. I'm on chapter 21 now and I'm really pleased with how it's coming along so far. Who knows maybe I'll be done by the summer... here's hoping.

I made some salmon cakes over the weekend. I found the recipe in this months Family Circle. They turned out pretty good so I wanted to share. I hope you enjoy them as much as we did.

Salmon Cakes

Ingredients:

3 Tablespoons of vegetable oil
1 medium carrot, finely diced
1 rib celery, finely diced
1 can 14.75 ounces of pink salmon
1 cup plain bread crumbs
1 1/4 teaspoons of Old Bay seasoning
1 teaspoon Dijon mustard
1/4 teaspoon cayenne pepper
1/4 cup mayonnaise
1/4 cup of parsley, chopped
1 Tablespoon lemon juice

Recipe:

In a large nonstick skillet, heat 1 tablespoon of the oil over medium heat. Add celery...


Then add carrots


Cook 5 minutes until slightly softened.


Remove to a large bowl.



Drain salmon; remove bones, if desired.


Add to bowl with cooked vegetables



Add bread crumbs


Add Old Bay


Add mustard, cayenne, mayonnaise, lemon juice and parsley


Combine well and form into cakes, about 1/3 cup each.



 In same skillet, add another 1 tablespoon of the oil over medium heat. When oil is hot, add half the cakes to the pan and cook 2 to 3 minutes per side or until browned. Repeat with remaining 1 tablespoon oil and remaining cakes.


Serve with your choice of sides. I chose potato salad.


I joined Weight Watcher's yesterday and I'm pretty excited about it. I will be eating healthier and having smaller portions now. My daughter has decided that she's also up for the challenge, (even though she's a size 7). She'll be changing her eating habits, too... bless her heart.

Okay, this is the book that I just finished reading. I loved it! It's the first time I've read anything by John Rector and all I can say is... I am now a fan and I'll definitely be looking for more of his novels. If you like mystery and suspense, then this is the story for you.
